Marinated simmer hake with coriander

    hake fillets, cut into small pieces and lightly floured

    olive oil

    baby marrows, sliced
  • 1
    onion, thinly sliced
  • 60
    white wine vinegar
  • 45
    white wine

    cloves garlic, crushed

    coriander seeds
  • 5
  • sea salt and milled pepper
  • fresh coriander leaves


Heat oil and fry hake until pale gold. Remove, drain and arrange on a platter. Using same pan, stir-fry vegetables for 2 to 3 minutes. Spoon over hake. Add vinegar, wine, garlic, coriander seeds, sugar, salt and pepper to pan. Simmer for 2 to 3 minutes, stirring, and spoon over hake. Sprinkle with fresh coriander leaves, chill lightly and leave to marinate. Serve with slices of piping hot boiled potatoes sprinkled with dill and a little cream. TOTAL KILOJOULE COUNT: 9 580 kJ (2 290 Cal). A portion: 1 915 kJ (460 Cal).
