Sauce:
500.00 ml wine — sparkling
80.00 ml spring onions — finely chopped
30.00 ml vinegar — white wine
2.00 ml black peppercorns — whole
Shrimp:
250.00 ml wine — sparkling
65.00 ml fresh chillies — 573
3.00 spring onions — finely chopped
0.00 salt and freshly ground black pepper
24.00 shrimps — peeled, deveined
250.00 g cherry tomatoes
15.00 ml fresh parsley — chopped
0.00 unsalted butter — chilled, chopped

Method:

1. For the sauce: Mix together sparkling wine, spring onions, vinegar and peppercorns in heavy, medium saucepan.
2. Boil until reduced to &#188 cup liquid, for about 20 minutes.
3. For the shrimp: Mix together sparkling wine, olive oil, spring onions, salt and black pepper in a bowl.
4. Add shrimp and stir to coat shrimp evenly. Marinate shrimp at room temperature for 30 to 60 minutes, turning
occasionally.
5. Add cherry tomatoes and parsley.
6. Preheat oven to 180&#176C. Grease a shallow roasting pan. Drain shrimp and arrange with cherry tomatoes and parsley on prepared roasting pan in single layer.
7. Roast in oven for 15 minutes or until just opaque in centre, turning occasionally, about 7 minutes per side.
8. Re-heat sauce, whisk in butter a piece at a time, allowing each to melt before adding the next (do not boil or sauce will separate). Season to taste with salt and pepper.
9. Spoon warm sauce over shrimp. Sprinkle with fresh herbs and serve.
