Ingredients (10)

3.00 red pepper
3.00 green pepper
3.00 yellow pepper
125.00 ml vinegar — red wine
30.00 ml sherry — medium dry
125.00 ml fresh chillies — 573
5.00 ml salt
2.00 ml black pepper — freshly ground
10.00 ml sugar
15.00 olives — pitted and sliced

Method:

1. Seed the peppers, removing any thick membranes.
2. Cut into chunky pieces.
3. Place in a pan of boiling water and cook for 3 minutes.
4. Drain well and cool.
5. Mix remaining ingredients together, except for olives.
6. Layer the peppers and olives in a wide-necked sterilised jar and fill with the vinegar mixture.
7. Cover.
8. Store in the fridge. Marinate for 1 week before using.
