Ingredients (11)

2.00 garlic — cloves
0.00 salt — just a pinch
1.00 lemon — juice only
1.00 onion — small, grated
8.00 ml smoked paprika
8.00 ml cumin — ground
15.00 ml fresh chillies — 573
0.00 sea salt and freshly ground black pepper
4.00 tuna steaks — swordfish
0.00 tomato salsa
1.00 lemon — quartered

Method:

Use a mortar and pestle to pound the garlic and salt until smooth.
Stir in the lemon juice and transfer the mixture to a small bow.
Add the onion, paprika (if using) and cumin and mix.
Rub the mixture over the fish, drizzle with olive oil and leave to marinate in the refrigerator for at least two hours.
Braai for two to three minutes on each side over the coals or cook in a very hot griddle pan. It can also be grilled under the oven grill.
Serve with the tomato sauce or fresh tomato salsa and lemon wedges.
