Marinated beef

  • 1
    large fillet of beef, tied
  • salt and pepper
  • Dijon mustard
  • 125
    garlic or basil-flavoured light olive oil
  • 25
    freshly chopped sweet basil leaves
  • 30
    tarragon vinegar
  • salt and pepper
  • 3
    large cloves of garlic, mashed


1. Season the meat with salt and pepper. Spread with mustard, and roast in a preheated oven at 160 ºC on a rack on top of a roasting pan, until a reading of 60-65 ºC is obtained from a meat thermometer inserted into the thickest part of the meat. Alternatively, roast it for 15 minutes per 500 g of meat, plus an extra 20 minutes. Allow the meat to get cold. Cover with clingfilm and freeze for 2 to 3 hours. Uncover, remove string and slice in paper-thin slices. 2. Mix all the ingredients for the marinade. Arrange some of the meat in a single layer in a porcelain dish and sprinkle some marinade over. Repeat until all the meat and marinade is used. Cover and refrigerate overnight.
