Maria's Prawns

  • 2
    prawns, washed
  • salt and freshly ground black pepper
  • 1
    juice of lemon
  • 15
    olive oil
  • 125
  • 1
    red chilli, finely chopped (optional)
  • 100
    dry breadcrumbs
  • 2
    eggs, whisked
  • oil for deep-frying


Cook the prawns in boiling salted water for 5 minutes only. Rinse them under cold water and drain. Remove the shells but keep the tails intact. Mix the salt, pepper,lemon juice, olive oil, water and chilli, if using, and marinate the prawns in the mixture for an hour in the fridge.
Roll the prawns in the breadcrumbs, then in the whisked eggs, then in the breadcrumbs again. Heat the oil and fry the prawns for 2 minutes.
Serve immediately with chips and salad.
