Maple syrup and mustard chicken

Ingredients (5)

4 chicken breast fillets — free-range
8 bacon — rashers
1/4 cup maple syrup
2 Tbs wholegrain mustard
TO SERVE:
sweet potatoes — orange, baked

Method:

Preheat the oven to 200ºc.

Wrap each chicken breast in two bacon rashers, one length ways and one across the width.

Mix the maple syrup and mustard and coat the chicken breasts well with this mixture.

Place the chicken in a roasting tin with the marinade and bake for 25 minutes. (Place under the grill for a few minutes after baking if you would like the bacon to crisp up a bit more.)

Serve the chicken fillets with plenty of the maple syrup marinade and the orange sweet potatoes.

Cook’s Note It’s important to use real maple syrup (available from large supermarkets and health food stores) and not golden syrup with maple syrup flavouring, as this has a completely different taste and texture.
