Mango ice cream

  • 3
    egg yolks
  • 60
    castor sugar
  • 1
    large stringless mango, mashed
  • 250
    cream, stiffly whipped


Beat egg yolks and sugar together. Place over boiling water and beat until thick and pale yellow. Remove from the heat and continue beating until the mixture has cooled completely. Add the mango purée and mix well. Fold in the cream and freeze. Makes 750 ml ice cream.
