Mango, bacon and ricotta salad

Ingredients (8)

4.00 large handfuls rocket — washed and dried
2.00 figs — dried, soaked
125.00 ml ricotta cheese
60.00 ml olive oil — to taste
500.00 ml vinegar — balsamic
4.00 mango — peeled
8.00 rashers bacon
5.00 ml sea salt and freshly ground black pepper

Method:

Reduce the balsamic vinegar by ¾ by simmering over low heat.

Drain the figs and purée with the vinegar in a food processor until smooth.

Fry the bacon until crisp.

Slice the mangoes into thin slices.

Arrange the rocket leaves on four plates and arrange the fried bacon, mango slices and ricotta cheese on top.

Drizzle with the vinegar dressing and olive oil and sprinkle with salt and pepper.
