250.00 ml dried apricots — finely chopped
15.00 ml orange — zest only
250.00 ml orange juice
250.00 ml Buttermilk
125.00 g butter — or margarine, melted
125.00 ml honey
2.00 eggs
195.00 g flour — wholewheat
140.00 g flour — self-raising
15.00 ml Baking powder
125.00 ml muesli — toasted
125.00 ml wheatgerm
TOPPING
60.00 g brown sugar
3.00 ml cinnamon — ground
15.00 ml flour
30.00 g butter — melted
125.00 ml muesli — toasted

Method:

Preheat oven to 180 ºC. Grease a muffin pan.
1. Mix together apricots, orange rind and juice in a bowl, allow to stand for 10 minutes.
2. Stir in the buttermilk, butter, honey and eggs.
3. Combine flour, baking powder, muesli and wheatgerm. Make a well in the centre and add apricot mixture, stir mixture until well combined.
4. Spoon into hollows of the muffin pan and sprinkle with topping.
5. Bake for 20 minutes.
TOPPING: Mix together all ingredients.
