    large egg
  • few drops vanilla essence
  • 55
    castor sugar, sifted

    cake flour
  • 1
    orange, finely grated zest
  • icing sugar for dusting


Preheat oven to 190 ºC. Grease patty pan cases. Melt butter, then cool. Whisk egg, vanilla essence and sugar in a large mixing bowl until a very thick mousse that leaves a trail is formed. Sift flour over the bowl and fold into mixture. Then fold in butter and zest. Fill moulds with mixture and bake for eight minutes. Turn out on a cooling rack and dust with icing sugar. Dip into melted orange butter and serve hot. Makes 36.
