Madame Mauvais's smoked oyster pâté

    smoked oysters
  • 200
  • 4
    cloves garlic
  • avocado pear (optional)
  • 65
    cream (or more to taste)
  • 1
    lemon, juice
  • milled pepper


Drain oysters and set aside. Process butter and garlic (and a few fresh herbs if you have them) in a food processor. Add remaining ingredients and blend until smooth. Adjust seasoning and serve with Melba toast. If you prefer a chunkier pâté, you need only to blend the ingredients until the desired texture is achieved.
