Macadamia nut tartlets

    chopped macadamia nuts

    orange, grated rind
  • 45
  • strips of lemon rind
  • 1
    quantity shortcrust pastry (see recipe)


Prepare shortcrust pastry according to the recipe and line eight to ten 7 cm loose-bottomed pie dishes. Bake blind. To make the filling: Melt the butter and sugar slowly and bring the mixture to the boil. Add the remaining ingredients and bring to the boil once more. Remove from the heat. Spoon the filling into the baked pie crusts and bake for 20 minutes at 180 ºC (350 ºF) or until the filling is golden brown and caramelised. Place on a wire rack to cool completely and remove from the pans. Decorate with strips of orange and lemon rind. Makes 8-10 tartlets.
