Macadamia nut brittle

    macadamia nuts, chopped


Place sugar in a saucepan and heat gently over low heat until sugar has dissolved and turned dark caramel in colour. Stir in nuts and pour onto a greased baking sheet. Leave to set. Break into pieces by hitting brittle with the back of a knife. Store in an airtight container.
