Macadamia mayonnaise

  • 250
    toasted macadamia nuts, finely chopped
  • 2
    extra-large eggs
  • 500
  • salt and freshly ground black pepper to taste
  • vinegar and lemon juice to taste


Process the macadamia nuts in a food processor until fine. Remove the nuts and put to one side. Beat the eggs in the food processor and, while the machine is running, add the oil in a thin stream. Season to taste with salt, pepper, vinegar and lemon juice, and add the ground nuts.
