Macadamia and ricotta salad

    ricotta, chilled
  • 125
    finely chopped macadamia nuts
  • packet mixed lettuce leaves
  • 2
    smoked chicken breasts, sliced into thin strips
  • 90
    olive oil
  • 45
    balsamic vinegar
  • salt and freshly ground black pepper
  • 1
    French loaf


Cube the ricotta and coat with the chopped nuts, pressing the nuts on to the cheese cubes. Chill until needed. Arrange the lettuce on a serving platter and place the strips of smoked chicken and ricotta cubes on top. Blend the olive oil and vinegar, and moisten the salad with the dressing just before serving. Season with salt and freshly ground black pepper and sprinkle with any leftover nuts. Serve with toasted French bread and extra salad dressing. Serves 4.
