Lush winter salad

Ingredients (10)

500 g butternut — cubed
olive oil — salt and black pepper
250 g beetroot — cooked, cubed
4 spring onions — or small red onion, sliced
100 g salad greens — seasonal
1 fresh basil — handful
100 g chevin — cubed
1/4 cup mixed seeds
TO SERVE:
olive oil — parmesan infused
balsamic reduction

Method:

Preheat oven to 200°C.

Place butternut onto a roasting tray. Drizzle with some oil and season. Roast for +- 40 minutes until softened and slighly charred.

Gently combine all the salad ingredients and serve drizzled with olive oil and balsamic reduction.

Other variations add:
– ripe cubes of avocado
– parmesan shavings
– slices of prosciutto or crispy bacon
