150.00 g flour — self-raising
165.00 g castor sugar
30.00 ml cocoa powder
1.00 orange — zest and juice
125.00 ml milk — fat-free
3.00 ml cinnamon — ground
30.00 g margarine — reduced fat
60.00 g nougat — chopped
75.00 g demerara sugar
250.00 ml water — hot
0.00 orange — zest only

Method:

Preheat oven to 180 &degC.
Spray six 125 ml ramekins with cooking spray.
Sift flour, castor sugar, cocoa and cinnamon into a large bowl.
Add zest, juice, milk, margarine and nougat.
Stir well until combined.
Divide chocolate mixture between ramekins (not to the top) and sprinkle with demerara (available from large supermarkets) sugar.
Place in a roasting pan half-filled with hot water (bain marie) and bake for about 35 minutes.
Insert a skewer to test if done; it should remain slightly gooey when removed.
Serve hot, topped with orange zest and accompanied by a Noble Late Harvest.
