Ingredients (8)

1.00 loin of pork — bone intact
salt and freshly ground black pepper — to taste
3.00 garlic — cloves, cut into slivers
TOPPING
100.00 g cheddar cheese — finely grated
100.00 g blue cheese — finely grated
100.00 ml yoghurt — plain
15.00 ml lemon juice
25.00 ml fresh parsley — chopped

Method:

Preheat the oven to 160 ºC (325 ºF).
Debone the loin, remove the rind and fat if desired and season both sides with salt and pepper to taste. Roll up the meat and secure firmly with a piece of string. Using a sharp-pointed knife, pierce the meat and insert the slivers of garlic. Place the meat on a rack in a large oven pan and oven-roast for 25 minutes for every 500 g plus 25 minutes extra.
Mix all the ingredients for the topping and spread over the meat about half an hour before the end of the cooking time. Return to the oven till the topping has melted and browned slightly.
Serve immediately with baked apples if desired, and vegetables.
Serves 6.
