Ingredients (6)

800 g castor sugar
250g butter
125 ml milk
100 ml cointreau — or Amarula
1 condensed milk — tin
cake mix — vanilla

Method:

Heat all the ingredients in a heavy-based saucepan over a low heat until the sugar has dissolved.

Bring the mixture to the boil, stirring continuously. Reduce the heat and simmer gently for 40 minutes or until the mixture reaches soft-ball stage (if you drop a little of the mixture into ice-cold water it will form a soft ball with a fudge-like texture).

Use an electric beater to beat the mixture for three to five minutes, until thick and creamy. (Stop and pour out if the mixture starts to set.) Pour into a greased tin and allow to cool slightly, then cut into small squares.
