Lip-smacking shrimp salad

Ingredients (9)

1 frozen shrimps — packet, tinned shrimps
1 lemon
1 green pepper — deseeded and sliced
2 Granny Smith apples — sliced
lettuce — cos
bread — fresh, to serve
DRESSING:
80 ml mayonnaise
45 ml lemon juice — freshly squeezed
1 garlic — cloves, crushed

Method:

Bring 75ml water to the boil in a small saucepan. Add the zest of half the lemon and the shrimp. Boil for three to five minutes, or until the shrimp is heated through. Remove from the saucepan and set aside to cool.
Make the dressing by mixing all the ingredients together well.

Arrange the salad ingredients on a serving plate and scatter over the shrimp. Serve with the salad dressing on the side and some fresh bread, if you prefer.
