Yummy creamy chicken and leek stew

Ingredients

    ml
    sunflower oil
  • 8
    pieces chicken (thighs and drumsticks)
  • 2
    leeks, cleaned and sliced
  • 2
    cloves garlic, crushed
  • 5
    ml
    turmeric
  • 250
    g
    button mushrooms, sliced
  • salt to taste
  • 10
    ml
    lemon & pepper spice
  • 250
    cream
  • 65
    ml
    fresh coriander leaves
 

Method

 

Heat oil and fry chicken pieces until golden all over. Remove from pan and keep warm.

Add leeks, garlic and turmeric to the saucepan and cook until transparent.

Add mushrooms and season with salt and lemon & pepper spice. Cook for 5 minutes.

Return chicken to the saucepan, add cream, cover and simmer gently for 45 minutes or until cooked through.

Add coriander leaves and heat through.

Serve on pasta or rice.
