Tuna salad in avocados

    firm ripe avocados
  • 60
    ml
    fresh lemon juice
  • 15
    ml
    grated lemon zest
  • 2
    cans tuna chucks in oil, drained
  • ½
    red pepper, finely diced
  • 65
    ml
    mayonnaise
  • A few shredded basil leaves
 

Method

 

Cut 4 avocados in half.

Sprinkle 2 tablespoons of the lemon juice over halved avocados, and dice the remaining avocado.

In a bowl, combine diced avocado, lemon zest, the remaining 2 tablespoons of lemon juice, flaked tuna, red pepper, mayonnaise and basil.

Toss lightly and spoon mixture into the cut halves of avocado.

Serve immediately with crusty bread.
