Tomato bacon mini pizzas


TOMATO BACON MINI PIZZAS

    bread wheat flour

    dry instant yeast

    white sugar
  • 5
    ml
    salt
  • 250
    ml
    lukewarm water
  • 6
    slices streaky bacon, diced
  • ½
    green pepper, diced
  • ½
    red onion, finely chopped
  • 4
    plum tomatoes, seeded and diced
  • 15

    chopped basil
  • 30

    mayonnaise
  • 1
    clove garlic, crushed
  • 75

    grated cheddar cheese
 

Method

 

Preheat oven to 190°C.

For the dough: in a bowl mix together, bread flour, instant yeast, sugar and salt.

Add lukewarm water, knead for 10 minutes and leave to rest for 15 minutes.

Place bacon in a frying pan over medium heat.

Fry bacon until crisp.

Drain on paper towel and place in a medium size mixing bowl. Mix in green pepper, tomatoes and basil.

In a separate small bowl, combine mayonnaise and garlic.

Divide the dough into 6pieces, shape into rounds and flatten.

Spread the mayonnaise mixture evenly over the crust.

Spoon the bacon mixture over the mayonnaise and top the pizzas with cheese.

Bake for 18 to 20 minutes or until the top is bubbly and the crust is golden-brown.
