Tasty pork fillet with apricot sauce

    olive oil
  • 1 large leek, cleaned and thickly sliced

    mixed herbs

    dry mustard
  • 3

    freshly ground pepper
  • juice of 1 fresh lime
  • 4
    fresh apricots, pitted and sliced
  • 1
    cinnamon stick

    brown sugar

    apricot jam

  • 2 x 500g pork fillet
  • salt and freshly ground pepper

    sunflower oil
 

Method

30-35 mins
 

Heat oil in a medium-sized saucepan and add leeks, herbs, dry mustard and freshly ground black pepper, sauté for two minutes. Add the lime juice, cook for 1

minute.

Lower heat and add apricots and cinnamon stick and sauté for 2 minutesor until apricots are tender.

Add brown sugar, apricot jam and water; simmer until apricots are tender but not falling apart.

Remove from heat and set aside.

For the pork fillet; preheat oven to 180°C.

Remove any excess fat from pork, coat all sides with salt and pepper.

In a large ovenproof frying pan, heat oil to smoking hot.

Place pork fillet and sear on all sides (5-10 minutes total).

Place pan in preheated oven and cook for 10-15 minutes or until done.

Remove from oven and transfer onto a platter and loosely cover with foil and let it rest for 10 minutes.

Serve pork fillets sliced into thick slices and topped with the apricot sauce
