Strawberry and cream tart

    Tennis biscuits

    butter, melted
  • FILLING

    condensed milk
  • 60
    ml
    strawberry jam
  • 180
    ml
    cream
  • 50
    g
    fresh strawberries, roughly chopped
  • TOPPING
  • extra strawberries and whipped cream
  • pistachio nuts
 

Method

chilling: overnight
 

Grease a 14-16 cm tart dish with non-stick spray.

1. Crust: Blitz the biscuits in a food processor until fine and add the melted butter. Press into the prepared dish and chill until needed.

2. Filling: In a bowl, whisk together the condensed milk and jam and set aside.

3. Whisk the cream until stiff peaks form. Fold into the condensed milk mixture and pour over the crust.

4. Scatter the strawberry pieces over and chill in the fridge overnight.

5. Topping: Garnish with extra strawberries, whipped cream and pistachios before serving.
