Ingredients

  • 1 pork belly, size of your choice
  • fresh thyme, to garnish
  • 60
    ml
    hoisin sauce
  • 60
    ml
    soy sauce
  • 60
    ml
    honey
  • 30
    ml
    rice vinegar
  • 30
    ml
    red chilli, finely minced
  • 7,5
    ml
    BBQ spice
  • 2,5
    ml
    black pepper
  • 5
    ml
    fresh ginger, grated
 

Method

1 Place the pork belly in a zip-lock bag.

2 MARINADE

Mix all the ingredients well and pour over the pork belly.Seal the bag. Marinate in the fridge for several hours or overnight. Pre-heat the oven to 180°C.

3 Place the pork belly on a roasting rack (reserve the marinade) and roast for 3-4 hours. To check if the pork is cooked,pierce it with a fork – it should glide in easily.

4 Pour the marinade into a small saucepan. Simmer on a low heat until the glaze thickens. Every 20 minutes of the last hour of roasting, brush on layers of glaze to intensify the flavour.

5 Once cooked, remove the meat from the oven and let it rest for 15 minutes before serving.Garnish with the thyme.
