Spicy jerk chicken bites

    chicken wings
  • 30
    ml
    honey
  • 5
    cm
    piece fresh ginger, peeled and finely grated
  • 4
    cloves garlic, crushed
  • 15
    ml
    ground allspice
  • 10
    ml
    dried chilli flakes
  • 3
    spring onions, finely chopped, plus extra to serve
  • 65
    ml
    finely chopped fresh coriander
  • 65
    ml
    olive oil
  • salt and freshly ground black pepper
  • micro herbs to garnish
  • tomato relish to serve
 

Method

 

Preheat the oven to 180°C. Line two baking trays with baking paper.

Cut wing tips from chicken wings and discard.

Cut each wing in half at the joint.

Place in a large bowl.

Combine honey, ginger, garlic, allspice, chilli flakes, spring onions, coriander and oil in a bowl.

Season with salt and freshly ground black pepper and stir to combine.

Add to the wings. Toss to coat. Transfer wings to prepared trays in a single layer.

Bake for 30 minutes, turning once or until cooked through.

Transfer the wings to a platter, sprinkle with micro herbs and serve with a tomato relish.
