Spicy grilled fish with lemon

    olive oil

    fresh grey mullet or
  • 12
    whole sardines, gutted and cleaned
  • salt and freshly ground pepper

    paprika
  • 5

    peri-peri spice

    ml
    dried rosemary
  • 1
    lemon, sliced
  • TO SERVE
  • handful of fresh parsley (optional)
  • lemon wedges
 

Method

15-20 min
 

Preheat the oven to 230°C. Put a wire rack on a large baking sheet and grease well with non-stick spray.

1. Rub the olive oil on the skin side of the fish. Season with salt and freshly ground pepper.

2. Mix the paprika, peri-peri spice and rosemary and sprinkle on the outside and in the body cavities of the fish. Arrange the fish on the wire rack.

3. Tuck lemon slices in-side each fish. Put the baking sheet with wire rack in the oven and grill for 15-20 minutes or until the fish is done.

4. To serve: Sprinkle fresh parsley over (if using) and serve with lemon wedges.
