Spicy fruit bread

    cake fruit mix

    orange juice

    cake wheat flour

    instant yeast
  • 65

    sugar
  • 5

    salt

    ml
    ground ginger
  • 10
    ml
    ground cinnamon

    large egg
  • 375
    ml
    lukewarm milk
  • 60
    ml
    butter, melted
  • 80
    ml
    water
  • 30
    ml
    castor sugar
 

Method

 

Pre-heat oven to 180°C.

Grease a 23cm loaf tin.

Soak the cake mix in orange juice for at least 1 hour or overnight.

Mix together flour, instant yeast, sugar, salt and spices.

Mix together lukewarm milk and butter, add to dry ingredients mix to form a soft dough.

Transfer onto a lightly floured surface and knead dough for about 10 minutes until smooth and elastic.

Transfer into an oiled bowl, cover and allow to rise in a warm place until double in size.

Knock dough down, add mixed fruit to dough, knead until well incorporated and shape into a roll to fit the loaf tin.

Cover and allow to rise until double in size.

Bake in oven for 35 minutes or until golden brown.

For the glaze:

Heat water and sugar over moderate heat until sugar has dissolved and brush over bread as soon as it comes out of the oven.
