Saucy ginger pudding

A quick and easy but also mouthwatering self saucing pudding for a cold winters evening.

Ingredients (14)

60 ml treacle sugar
60 ml butter — melted
eggs — whisked
5 ml vanilla — essence
125 g dates — chopped
250 ml flour — self-raising
1,2 ml salt
10 ml ginger — ground
2,5 ml mixed spice — ground
5 ml cinnamon — ground

15 ml butter
ice cream — vanilla

Method:

Preheat the oven to 170°C.  Grease a 20cm ovenproof dish well with butter.

1   In a large bowl, beat the sugar and butter together until creamy. Add the egg and vanilla essence and beat until well combined.

2    Fold in the dates.

3 Sift the flour, salt, ginger, mixed spice and cinnamon over the   butter mixture and beat until just combined.

4   Pour the batter into the prepared dish and gently smooth the surface.

5    Sauce Heat all the ingredients in a saucepan and stir until melted. Pour the sauce over the pudding batter and bake for 45-50 minutes or until the pudding is cooked through – if it browns too quickly, cover with foil and continue baking.

6 To serve – warm with vanilla ice cream or custard.
