Samp salad bowls

Ingredients

  • DRESSING
  • juice of 2 lemons
  • 60
    ml
    lgood-quality olive oil
  • 10
    g
    fresh parsley, finely chopped
  • 10
    g
    fresh coriander, finely chopped
  • 2
    garlic cloves, crushed salt
  • SALAD
  • 6x250
    ml
    cooked samp
  • 1
    cucumbe
  • 1
    avocado
  • 10
    ml
    lemon juice
  • TO SERVE
  • micro herbs (as garnish)
 

Method

 

1. Dressing Whisk all the ingredients except the salt until well combined then season with salt.

2. Salad Rinse the cooked samp well and drain in  a colander. Transfer to a large mixing bowl and pour the dressing over. Mix and add more salt if needed.

3. Cut the cucumber into ribbons using a veggie peeler. Thinly slice or dice the avocado.

4. Divide the samp among four small bowls and arrange the cucumber ribbons on top. Arrange the avocado among the cucumber ribbons and drizzle a little lemon juice over.

5. To serve: Garnish with microherbs and serve.
