Salad with peanuts and calamari tentacles

    sesame seeds

    extra-light olive oil
  • 60
    ml
    fish sauce
  • 30
    ml
    soy sauce
  • 80
    ml
    rice vinegar
  • juice and zest of 2 limes
  • 45
    ml
    sugar
  • a generous handful of chopped fresh coriander

    lemon, sliced
  • 1
    pack frozen baby calamari tentacles
  • salt
  • olive oil
  • rocket
  • 60-100
    g
    roasted unsalted peanuts
 

Method

1.   1. Dressing: Heat the sesame seeds and oil in a pan until the seeds turn golden brown. Cool, then pulse in a food processor until smooth. Mix in the rest of the ingredients.

2. Salad: Put the lemon slices in the bottom of a steamer and arrange the calamari on top. Season with salt. Steam for about 5 minutes or until the tentacles are tender and done, then stir-fry in olive oil until slightly crispy. 

3. Pour a little dressing over the tentacles and arrange on a plate.

4. Moisten the rocket with dressing and arrange on the calamari. Sprinkle the peanuts over and serve.
