Roasted harissa pumpkin with avocado

    pumpkin, sliced

    harissa paste
  • 45
    ml
    olive oil
  • 45
    ml
    honey
  • 15
    ml
    Worcestershire sauce
  • 30
    ml
    lemon juice
  • 60
    ml
    olive oil
  • pinch of salt
  • 2-3
    ripe avocados, halved, peeled and pitted
  • 2
    spring onions, chopped
  • 1
    chilli, chopped (optional)
 

Method

 

Preheat the oven to 200°C.

Grease a large baking sheet with nonstick spray.

1 PUMPKIN Arrange the pumpkin slices in a single layer on the baking sheet.

Mix the harissa paste and olive oil well and spread all over the pumpkin.

Roast for 35-40 minutes or until soft.

2 DRESSING Mix all the ingredients well.

3 TO FINISH Arrange the pumpkin slices on a large serving plate.

Arrange the avocado halves in between the pumpkin slices and drizzle the dressing over. Sprinkle the chopped spring onion and chilli (if using) over and serve.
