Roast ribs with homemade bread rolls

  • juice of 2 oranges and zest of 1 orange

    bread dough, rolled into balls

  • wild rocket
  • butter (optional)

Method

1. Marinade. Cook the  ingredients in a small saucepan for 10 minutes or until fragrant.

2. Meat. Put the rack of ribs in a roasting pan and pour the marinade over. Rub into the meat well. Season with salt and pepper. Cover with foil and bake for about 1 hour or until the meat comes off the bone.

Baste often with the marinade. Remove the foil and bake (or braai) for a further 15 minutes or until well browned.

3. Apple sauce. Cook all the ingredients in a small saucepan until soft and fragrant.   

4. Bread rolls. Cook the rolls in a griddle pan over moderate heat until done. Or arrange on a baking sheet dusted with flour and bake alongside the meat for 30-40 minutes.

The rolls are done when they sound hollow when tapped.

5. To serve. Slice the rack  into individual ribs and garnish with rocket. Serve with the sauce, rolls, butter and salad (if using).
