Rice salad with chicken

    chicken breast fillets

    chilli flakes
  • Salt and freshly ground pepper

    lemon juice
  • 15
    ml
    oil
  • 500
    ml
    parboiled rice, cooked
  • 4
    carrots, peeled and diced
  • 125
    ml
    corn kernels
  • 4
    gherkins, diced
  • 1
    onion, chopped
  • Handful of fresh coriander, chopped
  • 2
    garlic cloves, crushed
  • 15
    ml
    lemon juice
  • 2.5
    ml
    cayenne pepper
  • 60
    ml
    mayonnaise
  • Salt and freshly ground pepper
  • 2
    carrots, peeled
 

Method

 

1 Season the chicken with chilli flakes, salt, pepper and lemon juice.

Heat the oil in a pan and fry the chicken until cooked through.

Thinly slice the chicken and set aside.

2 RICE SALAD

Mix all the ingredients and season with salt and pepper.

3 TO FINISH

Serve the rice salad in bowls and arrange the chicken slices on top.

Using a veggie peeler thinly slice the carrots and arrange on top of each bowl of salad and serve.
