Red velvet oreo truffle chocolate cake


RED VELVET OREO TRUFFLE CHOCOLATE CAKE

    box red velvet cake mix
  • 315
    ml
    water
  • 80
    ml
    oil
  • 3
    large eggs
  • 250
    ml
    sour cream or plain yoghurt
  • 1
    packet Oreo cookies
  • 1
    tub cream cheese
  • 125
    g
    butter
  • 375
    ml
    sugar
  • 80
    ml
    evaporated milk
  • 1/2
    cup chocolate chips (extra for garnish)
 

Method

 

Preheat oven to 180° C. Grease and line2 X 22cm cake tins.

For the cake: Make cake as per the instructions on the pack: Blend together cake mix, water, oil and eggs.

Beat at low speed for 30 seconds.

Spoon mixture into prepared cake tins. Bake for 30 to35 minutes or until a skewer inserted comes out clean.

Remove the cake from oven and cool on a wire rack.

For the filling: Crush Oreos in a food processor, set aside 3 cookies for topping, and stir in cream cheese until fully blended.

Spread Oreo filling between the cake layers and stack.

For the drizzle: In a saucepan over medium heat, melt together butter, sugar and evaporated milk.

Bring to a boil for 1 minute and stir in chocolate chips.

Remove from heat and pour over cake.

Decorate the cake with chocolate chips and Oreo cookies!
