Orange and passion fruit cake

    ripe passion fruits, halved

    tub cream cheese

Method

 

Heat oven to 170ºC and grease and line the bases of 2 x 20cm sandwich tins with baking paper.

For the cake: Separate eggs. Beat egg yolks, sugar and grated orange rind until light and fluffy.

Mix flour and baking powder together.

Alternately add flour mixture and orange juice to the egg yolk mixture.

In a separate bowl, beat egg whites to form stiff peaks and fold into batter.

Pour into tins and bake for 50 to 60 minutes.

For the drizzle: Scoop out the passion fruit pulp into a small pan.

Add orange juice and castor sugar and heat until bubbling and syrupy.

For the icing: Beat cream cheese and butter until lump free.

Beat in icing sugar and vanilla. Chill until ready to assemble.

Sandwich cakes with icing and drizzle over with the granadilla syrup.
