Ingredients

  • a few baby cos lettuce leaves
  • 3 boiled eggs, shelled and halved
  • 250
    g
    basic pickled dried tomatoes and half the pickling liquid
  • ½ cucumber, halved length-ways, deseeded and chopped
  • 2-3 radishes, thinly sliced
  • ½ small red onion, finely chopped
  • 1 large avocado, cubed
  • 125
    g
    mixed fresh cherry tomatoes, whole or halved
 

Method

 

1 Put the lettuce leaves on a salad platter. Arrange the boiled eggs, pickled dried tomatoes, cucumber, radishes, onion, avocado cubes and fresh tomatoes on top.

2 Use the pickling liquid as a dressing for the salad.
