    pecan nuts, roughly chopped
  • 200
    g
    digestive biscuits, broken into pieces
  • 125
    g
    pitted dates, roughly chopped
  • 100
    g
    almond flakes
  • 200
    g
    dark chocolate, roughly chopped
 

Method

Line two baking sheets with baking paper.

1      Combine the nuts, biscuits, dates and almonds in a mixing bowl.

2      Put the chocolate in a glass microwaveable bowl or jug and microwave for 30 seconds. Stir well and microwave for another 30 seconds, then stir again. If the chocolate still hasn’t melted, repeat the process.

Add half the melted chocolate to the nut mixture and combine well – everything should be covered in chocolate.

3      Using the rest of the chocolate, make 18-20 puddles, each the size of a R5 coin, on the prepared baking sheets.

5     Spoon the nut mixture on top of each chocolate puddle to form clusters.  Transfer to the freezer for an hour or until completely set. Carefully remove from the baking paper and store in an airtight container in the fridge.
