No-bake brownies

Ingredients

    g
    dark chocolate, chopped
  • 400
    g
    evaporated milk
  • 5
    ml
    vanilla essence
  • 3
    pkts chocolate wafer cookies, finely crushed
  • 500
    ml
    desiccated coconut
  • 100
    g
    salted peanuts, chopped
  • 100
    g
    castor sugar
  • 30
    ml
    coconut, toasted
  • 30
    ml
    peanuts, finely chopped
 

Method

 

Line a 20cm X20cm square baking dish with plastic wrap, leaving a bit hanging on the sides.

Heat chocolate and evaporated milk in a saucepan over medium heat, stirring until the chocolate melts.

Remove from heat and vanilla essence.

Combine cookies, coconut, peanuts and castor sugar in a bowl.

Pour in the chocolate mixture and mix well.

Pour mixture into dish.

For the topping:

Mix coconut and peanuts and sprinkle over brownie mixture.

Refrigerate until set. Remove brownies from pan.

Remove plastic and cut into squares.
