Mozambican butternut and cashew curry

    olive oil

    large onion, finely chopped

    garlic cloves, crushed
  • 15

    ground cumin
  • 2,5

    ground cinnamon

    turmeric

    fresh ginger, peeled and finely chopped

    butternut, cubed
  • 1
    can coconut milk
  • 750
    ml
    vegetable stock
  • 250

    roasted cashew nuts
  • handful of fresh coriander
  • cooked rice to serve
 

Method

1. Heat the oil in a large pot over medium heat and fry the onion. Add the garlic, spices and ginger and stir for a minute.

2. Add the butternut, coconut milk and stock. Simmer uncovered for about 30 minutes, stirring occasionally, until the butternut has softened.

3. Sprinkle the cashew nuts and coriander over. Serve with rice.
