Mouthwatering watermelon granita

  • 1,8-2
    kg
    watermelon
  • 60
    g
    preserved ginger, including the syrup
  • zest and juice of 2 limes
 

Method

 

1 Cut off the watermelon rind and chop the flesh into chunks, picking out the seeds.

2 Roughly chop the ginger and transfer to a large sealable freezer bag along with the watermelon chunks.

3 Add the lime zest and juice, seal the bag and freeze flat for at least 8 hours or until completely frozen.

4 Just before serving, add the frozen mixture to a food processor and blitz until it resembles snow.

Serve in bowls with a drizzle of the ginger syrup.
