Morvite crumpet with syrup

    baking powder

    ml
    sugar
  • 625
    ml
    milk
  • 2
    large eggs

    ml
    vanilla essence
  • 60
    ml
    butter, melted
  • 50

    butter
  • 65
    ml
    maple or golden syrup
  • whipped fresh cream
 

Method

 

Mix together flour, Morvite, salt, baking powder and sugar in a bowl and set aside.

In a separate bowl mix milk, eggs and vanilla.

Pour into the dry ingredients, stirring gently.

Stir in melted butter.

If the batter is too thick, add a small amount of milk.

Heat 1 tablespoon of butter in a non-stick frying pan over medium to low heat.

Drop ¼ cup batter per crumpet and cook until golden brown on both sides.

Remove the crumpets from pan and set aside.

Stack desired number of crumpets, placing a pat of butter between each pancake.

Drizzle with warm syrup and top with a dollop of whipped cream if desired.

Decorate with fresh strawberries.

Serve immediately
