Monster cabbage and potato rösti with smoked sausage and mustard


Monster cabbage

    potatoes, grated
  • 1
    onion, sliced

    cabbage, shredded
  • 125
    ml
    flour
  • 1
    egg, whisked
  • salt and freshly ground pepper
  • 30

    oil
  • 15
    ml
    butter
  • 15
    ml
    wholegrain mustard
  • 10
    ml
    Dijon mustard
  • 15
    ml
    chopped fresh dill
  • 60
    ml
    plain yoghurt
  • grated zest of 1 lemon
  • 4 smoked sausages, fried and sliced
 

Method

1 Squeeze the grated potatoes to remove excess moisture.

In a large bowl, mix the potatoes, onion, cabbage, flour and egg.Season with salt and pepper.

2 Heat the oil and butter in a large pan.

Spread the potato mixture in the pan and compact it with a wooden spoon.

Fry over low heat for about 10 minutes or until the rösti turns golden brown and becomes denser.

3 Use a large egg lifter to carefully turn the rösti over.

Fry until golden brown on the other side (another 5-10 minutes).

Carefully transfer to a serving plate.

4 MUSTARD YOGHURT

Mix the mustards and dill into the yoghurt.

Add the lemon zest (if using), salt and pepper.

5 TO SERVE

Slice the rösti and serve with the mustard yoghurt and fried sausages.
