Marinated baby marrow salad


Baby marrow salad

Ingredients

    large baby marrows, washed
  • 1
    garlic clove, chopped
  • 125
    ml
    white wine vinegar
  • 60
    ml
    olive oil
  • 5
    ml
    dried mint
  • 2,5
    ml
    salt
  • 5
    ml
    freshly ground pepper
  • 250
    g
    cherry tomatoes, halved
  • 1-2
    rounds feta cheese, cubed
  • handful of fresh basil, torn
 

Method

1 HR
 

1 Remove the tops of the baby marrows and discard.

Using a veggie peeler, slice them into ribbons. Transfer to a marinating or glass bowl.

Sprinkle the garlic over and mix lightly.

2 MARINADE

Mix everything well and pour over the baby marrow ribbons. Stir lightly, cover and leave to marinate in the fridge for at least an hour or overnight.

3 TO FINISH

Mix the halved tomatoes, feta cheese cubes and fresh herbs with the baby marrow ribbons and serve as a side dish with a braai.
