Marbled strawberry mousse


Marbled strawberry mousse

Ingredients

  • 350
    g
    frozen or fresh strawberries, sliced
  • 125
    ml
    sugar
  • 125
    ml
    water
  • juice of 1 lemon
  • 500
    ml
    cream
  • 15
    ml
    castor sugar
  • 15
    ml
    gelatin, sponged in 30ml water
  • ginger biscuits
 

Method

Cooking: 15 min, Chilling: 2 hour
 

Keep 6-8 glasses handy.

Compote

1. Put all the ingredients in a saucepan and heat while stirring until the sugar has dissolved. Simmer slowly for 5 minutes. Remove from the heat, transfer to a bowl and set aside to cool completely.

2. Purée the compote with a stick blender.

Mousse

3. Whisk the cream until stiff peaks form, then fold in the castor sugar.

4. Melt the gelatin in the microwave for 10 seconds. Using an electric beater, mix the gelatin into the cream mixture. Pour the compote over and lightly mix through the mousse. Spoon into the glasses and chill in the fridge until needed.

To serve

5. Serve with the biscuits for dipping.
