Ingredients

    Fresh mixed berries
  • 90

    sugar

    ml
    Fresh orange juice
  • ½ packet ginger cookies
  • 15

    melted butter
  • 1
    cup
    chilled thick cream
  • 90
    ml
    sour cream
  • 8
    ml
    vanilla extract
  • 65
    ml
    sugar
 

Method

1-2 hrs
 

For the berries;using a potato masher or the back of a wooden spoon, mash 1 cup berries with sugar and orange juice in a large bowl until sugar begins to dissolve.

Gently stir in remaining 3 cups of berries; let it sit at room temperature, tossing occasionally, until berries are juicy for about 1-2 hours.

Spoon berries into glass serving bowls.

Crush biscuits in a food processor and mix with melted butter and sprinkle on top of berries.

In a medium bowl, mix together chilled cream, sour cream, vanilla essence and sugar.

Using an electric or rotary beater, beat until soft peaks form.

Spoon cream mixture into a jug and serve immediately with berries and ginger crumble.
