Lentil pizza

    store-bought bread dough
  • Flour for dusting

    cooked brown lentils
  • 410
    chakalaka or tomato and onion mix

    chicken stock pot

    cheddar or mozzarella cheese, grated
  • 2
    garlic cloves, thinly sliced
  • Handful of cherry tomatoes, halved
  • Handful of fresh coriander



Preheat the oven to 200°C.

Grease 2-3 large baking sheets with non-stick spray and dust lightly with flour.

1 PIZZA Divide the dough into six equal balls.

On a lightly floured surface, roll each out into a pizza base and arrange on the prepared baking sheets.

Prick with a fork, then bake for 12 minutes.

Remove from the oven and set aside.

2 TOPPING While the bases are baking, heat the oil in a deep pan and fry the onion and garlic until fragrant.

Add the lentils and chakalaka or tomato and onion mix and heat.

Add the chicken stock and stir until melted.

3 Add the chutney to the lentils and simmer until half the moisture has evaporated.

Season with salt and freshly ground pepper.

Remove from the heat and stir in the chopped coriander.

4 TO FINISH Sprinkle the cheese over the pizza, then add the lentil mixture.

Sprinkle the garlic on top and bake for 5-10 minutes or until the cheese has melted.

5 Remove from the oven and top with the cherry tomato halves.

Sprinkle the fresh coriander over, slice and serve.
