Jalof rice with chicken

Ingredients

    sunflower oil

    chicken wings, cut in half
  • 6
    cups chicken stock
  • 2
    onions, chopped
  • 2
    cloves garlic, crushed
  • 1
    red or green pepper, finely diced
  • 400
    g
    rice
  • 65
    ml
    tomato paste
  • 4
    medium tomatoes, peeled and chopped
  • 2
    carrots, peeled and diced
  • 250
    ml
    sliced green beans
  • salt and cayenne pepper to taste
 

Method

 

Heat oil in a large saucepan, add chicken wings, onions, garlic, cook for 10 minutes until the colour has changed, remove and keep warm.

Add chicken wings, add onions, garlic and pepper, cook for 10 minutes.

Add stock, rice, tomato paste and tomatoes, cover and cook gently for 20 minutes.

Add carrots and green beans, season well with salt and pepper.

Cook for a further 20 minutes.
